We are well and truly in the thick of Winter and I have been exploring the wonderful world of herbs and spices to truly give us all that our body needs to keep fighting during flu season and to give our immune system a fighting chance.
Below is the recipe for the BEST porridge in the WORLD! All of the spices have been selected to aid and boost our immune system during the cold and dark winter months. You can adjust the amounts depending on your own tastes, and leave the skin on the ginger there is extra goodness in there that our bodies need.
Ingredients: Thumb sized piece of fresh ginger chopped up small (to taste, I like it spicy so add a lot) 1 cup porridge oats 3 cups water Generous pinch of Cinnamon Pinch of Ground Nutmeg Pinch of Ground Cloves Pinch of ground Cardamom/3-4 Cardamom Pods Crack of Black Pepper (to taste) 1/2 tbsp Tahini Pinch of Ground Fennel Seeds 1 tsp ground flax seed Method: I grind my own spices (nutmeg, fennel seed and cardamom) but you can add already ground spices; I just find the flavour is more distinct when freshly ground. Add all of the above ingredients into a small saucepan, and heat over a medium heat, constantly stirring. If you like your porridge thinner then you can add more water. Once your oats are cooked you can add your favourite toppings. My staple is: chia seeds, brazil nuts, sesame seeds, pumpkin seeds, sunflower seeds, almonds, walnuts and raw shredded coconut.
